Meal Plan: January 20th

To all my fellow Whole30-ers, we are doing this! Whatever day you are on, you are working toward not only a healthier body, but a healthier mindset when it comes to food. Remember, there is no such thing as a perfect Whole30, so stay compliant and do the thing!

This week is going to be exciting; I am going to the Defined Dish book tour here in Chicago. I am super excited to meet Alex, one of the food bloggers whose recipes have yet to disappoint, and whose recipes make frequent rounds on my meal plans (as I am sure many of you notice). Don’t you worry, I will be sure to take some stories and share on Instagram. Oh, and Teri Turner from No Crumbs Left will also be there, how exciting. Eek!

Okay, on to this week’s meal plan. Keep in mind, my lunches are often leftovers, as I tend the live by the motto, cook once, eat twice, especially while on Whole30. However, I have provided a few simple and easy lunch ideas in case leftovers are starting to dampen your Whole30 spirits.

I usually do my grocery shopping on Sunday, so everything is stocked for the week. One of my staples is a plain rotisserie chicken. The options for it are endless, and they are perfect for quick, on the go lunches, just like the ones you find in this week’s meal plan.

Pro Tip: Shred, chop or dice just after purchasing, when it is still warm, it is a lot easier this way.

This week’s adventure food: spaghetti squash served with Wednesday’s Epic Whole30 meatball dish. The kids have had this before, and still insist they do not like it, but I am just going to keep offering. ;)

Monday:

Lunch: Paleo Chicken Cobb Salad with Buffalo Ranch by Paleo Running Momma This sounds like such an easy way to spice up a boring salad. Remember that rotisserie chicken? Well, the perfect way to use it!

Dinner: Whole30 Fish and Chips by Mary’s Whole Life. I love how delicious this sounds, and the fact that this can be cooked on a sheet pan means less mess! Perfect, considering the kids will be home for MLK day.

Tuesday:

Lunch: Paleo Whole30 Chicken Salad Boats by the Movement Menu See! That rotisserie chicken is going to save your little Whole30-ing butt!

Dinner: Whole30 Baked Pork Chops by Joy in the Meantime I absolutely LOVE this recipe! When I was younger, I would request this dish for my birthday. A little bit cleaned up from the original, these pork chops will change your thoughts on frying pork chops. They are insanely easy, and have the crust and crisp that you would expect from frying. I will serve with steamed broccoli, cauliflower mash, and dinner rolls (omit if Whole30) for the boys.

Wednesday:

Lunch: Copycat Chipotle Chicken Burrito Bowl by Lexi’s Clean Kitchen That rotisserie chicken coming in hot with three different lunch options this week! Wahoooo!

Dinner: Epic Whole30 Baked Meatballs by the Defined Dish. I will serve this with spaghetti squash and grain free pasta (for the boy), and a side salad.

Thursday:

Lunch: Sausage and Pepper Lettuce Wraps by the Sunkissed Kitchen this would also be perfect as a make ahead meal or even dinner.

Dinner: Brussels sprouts Hash Recipe by Delish If you do not have any leftovers from your lunch prep, this is perfect when you just need to take a *slight* break from cooking. And with kiddos, you may have better luck with a deconstructed version. I would also add some toast and/or paleo pancakes for the kids (and possibly my husband), a brinner of sorts!

Take-Out Friday:

Lunch: The Best Whole30 Tuna Salad by Joy in the Meantime Yup, this one is mine! I am in love with the crunch and freshness of the red pepper, and it adds so much dimension to this crazy easy dish.

Dinner: Sticky Asian Chicken by Confessions of a Clean Foodie Hands down one of my favorite, and go-to sauces for stir fry. This recipe is incredibly easy and is really packed with flavor. I will serve with steamed broccoli cauliflower rice and brown rice for the boys (omit if Whole30).
