Pretty Pretty Sandwiches

It’s not secret that I love a good sandwich! In fact back in the day, when I stayed out late with friends and had a cocktail (or two), I was known for my late night sandwich creations. There’s just something about the fresh ingredients that make it such a satisfying meal. In fact, you could whip these darlings up for dinner and you’d get the same satisfied, rub the tummy response!
 
I’m not going to pull any punches here, use the freshest ingredients! There is no sautéing or baking, so you want to ensure that all the flavors are at their peek!

Ingredients:

 - 4 slices crusty French bread

- 4 oz. goat cheese at room temperature

- 4-5 large figs, sliced

- 1-2 tsp. fresh rosemary finely chopped

- Honey to taste

 
Directions:

  1. Slice bread and lightly toast
  2. Spread each slice of bread with goat cheese
  3. Thinly slice washed figs and spread across bread
  4. Sprinkle with chopped rosemary
  5. Devour  … err … enjoy!

 
Avocado, Tomato and Ricotta Sandwich by Housebeautiful.com
 
Ingredients:

- 1 lb. fresh ricotta

- Zest of two lemons

- ¼ cup extra virgin olive oil

- 2 pinches of Kosher salt

- 1 pinch ground black pepper

- 4 long slices of fresh bread

- 2 large perfectly ripe avocados

- 1 pint mixed color grape tomatoes

- 8 red pearl onions (thinly sliced into rounds)

- Skin of 1 preserved lemon, flesh removed and finely diced

- ½ teaspoon toasted poppy seeds

 
Directions:

  1. Mix ricotta, lemon zest, ¼ cup of oil and salt and pepper- set aside
  2. Arrange slices of bread and divined ricotta evenly among slices
  3. Split avocados and cut into slices and place on the bread slices
  4. Arrange tomatoes by nesting them into the avocados and then arrange onions slices over the tomatoes.
  5. Garnish each sandwich with sesame seeds and lemon skin and finally, sprinkle with poppy seeds and drizzle with olive oil.
  6. Enjoy! 

 

Green Apple and Cranberry Chicken Sandwich
 
Ingredients:

- About 2 C. cold rotisserie chicken

- 1 granny smith apple

- Avocado mayo (or feel free to use what you have on hand)

- Dried cranberries

- 4 long slices of fresh bread

 
Directions:

  1. Toast the bread (you can do this with the oven on broil for about 2 minutes each side- be sure to keep an eye so it doesn’t burn)
  2. Allow bread to cool slightly, spread mayo on each slice
  3. Thinly slice apple and spread evenly among slice bread
  4. Shred chicken (not too finely) and spread on each slice of bread, top with dried cranberries and ta-da, amazingness!
  5. Enjoy!
