Menu: September 30th
Monday: Lemon Garlic Chicken Thighs (Paleo Running Momma) served with brown rice (omit rice if keeping Whole30 compliant), and roasted Brussels sprouts
Tuesday: Epic Meatballs (Defined Dish) served with spaghetti squash, gluten free pasta (omit if keeping Whole30 compliant) and house salad
Wednesday: Instant Pot Chicken Tacos (omit tortillas to keep Whole30 compliant). I will be preparing similar to this recipe by Cookies and Cups and will serve with guac, salsa, romaine lettuce, jalapeños and raw red onions
Thursday: Roasted shrimp and broccoli. I will be using this recipe by New York Times Cooking but will sub broccolini for the regular broccoli florets.
Friday: “Take out Friday” is going to consist of some Instant PotWhole30 BBQ Pulled Pork by the Defined Dish. I will serve with pickled onions, roasted sweet potatoes and wilted greens.
